Gluten Free Almond Bites

Cookies with no flour and very little sugar, can you believe it?
These cookies didn’t have a very long life, they were gone about 45 minutes after I took them out of the oven – beware! 🙂
4 ingredients in total go into these great snacks!






Ingredients: (Yields 14 tablespoon size cookies)

150 grams sliced almonds
50 grams crushed walnuts
1 egg white
¼ cup sugar + 2 tbsps
Pinch of cinnamon

Directions:

***Preheat oven to 350F (180C)***

1. Lightly beat the egg white with the sugar.
2. Add the nuts and almonds into the egg mix and mix well until nuts and almonds are fully coated.


3. Place tablespoonful cookies on baking sheet covered with parchment paper. Flatten the cookies just a bit.
4. Insert into the preheated oven and bake for about 10 minutes until golden brown.

These turn out crunchy and tasty. Keep in sealed cookie jar to maintain freshness.
