I love lemon, especially in the summer. It’s so refreshing.
I like it in my drink, my salad, Popsicle…basically the more the merrier.
When I first started cooking I was looking for easy alternatives to the plain ol’ salad. I wanted something different from the traditional cucumbers and tomatoes, and this is how I got this great cucumber garlic salad.It’s easy. Refreshing, tangy and made of 4 ingredients, well…5 if you count the olive oil 🙂
The best thing about this salad is that it’s still as good even the day after. You simply keep it in the fridge and the cucumbers absorb the lemon and garlic – SO GOOD!
Ingredients:
5 Cucumbers
1-2 garlic cloves, crushed
3 tbsp fresh squeezed lemon juice
Chopped Dill, to taste
1-2 tbsp olive oil
Directions:
1. Cut the cucumbers into small cubes or you can slice them into really thin slices.
2. Add chopped dill, lemon juice and crushed garlic and top with olive oil. Mix well until combined.
That’s it!! You can serve at the minute it’s ready or even better if you can chill it in the fridge for about 30 minutes before serving.
Goes very well with fish and chicken!
