The Yemenite zhug is a type of spread or sauce used to simply spice things up J In Israel, it is mostly used as an addition to Falafel and I personally just love it on a piece of bread with good cheese or Hummus spread on it. Sometimes you can even add it to an omelet and end up with a very tasty and unique omelet. The coriander in it is very dominant. When we make this at home we just store it in a tightly sealed container in the fridge and use it on almost everything J we love it!
Ingredients:
1 whole bunch of Coriander or Cilantro
5 Garlic Cloves
1/2 hot pepper (you can use jalapeño, Chilli or any other pepper of that kind)
6 tbsp Olive Oil
Directions:
Simply place all ingredients in a food processor and process until it becomes a spread with no chunks in it. If you think it’s too thick add olive oil and alternatively if it’s too runny you can add coriander. Add salt to taste.
