Tuna Corn Bites – The Perfect Lunchbox Solution

Ahhhh School is back! And that means that the daily routine of packing lunch boxes is back with it. I know it’s just a small lunch but every year I take it as a personal challenge. I try to make sure that the kids get healthy lunches and in addition I try to make it fun for them. Kids are sometimes a tough audience and what may seem a perfectly good lunch for us, may look like a boring lunch to them and eventually will find its way back home along with a hungry child. So as I said, I try to make it fun and one good way of getting the little ones to eat something healthier than just a sandwich is making it into balls or patties. You can make them from veggies, rice, pasta and basically anything. This time I made it from tuna and added some corn and bell pepper for color. They were thrilled!

Tuna Balls with Corn - The Perfect Lunchbox Solution

This is a great option for either a snack, a quick bite or a special lunch for your little one's lunchbox. Beats the plain ol' sandwich.
Ingredients
  • 1 Tuna Can - Drained
  • 4 tbsp Corn
  • ½ Bell Pepper – Chopped
  • ¼ Onion – Chopped
  • 2 tbsp Vegetable Oil
  • 2 Eggs
  • 4 tbsp Bread Crumbs
  • Salt
  • ¼ Cup Vegetable Oil
Instructions
  1. Preheat 2 tbsp oil in a skillet over medium heat and sauté the onion and pepper until soften.
  2. In a bowl, combine tune, corn, onion and pepper mix (without the excess oil), eggs, bread crumbs and salt. Mix well until fully combined.
  3. Preheat ¼ cup oil over medium heat, form balls or patties of the mix (ping pong ball size) and place on skillet. Fry until golden brown on the bottom and them flip to fry the other side until golden brown.
