When it comes to cooking and baking, the best recipes are the easy ones, the ones that require approachable and available ingredients, not too many bowls or dishes and minimum time invested, am I right?
Yes, some of the best recipes out there are recipes that call for an overnight cooling, patience and lots of quality ingredients, but really…at this point in my life, I’d take the easy recipes in both hands and worship them LOL
Recipes that are quick with the end result, do not require me to go out and buy specialty ingredients and are delicious at the and of it all – are the winners in my world.
Take this recipe for example, it has quality ingredients and results in these crunchy yet melt in your mouth maple pecan cookies. These cookies that taste like pecans with a hint of maple are the perfect pairing for your cup of coffee, cup of tea or just you late night craving.
My super picky girl devoured half the container, so yeah, I’m probably not going to win mother of the year, but at least I know I made something good (both the girl and the cookies obvi π )
These are made in a food processor bowl and are really easy to make while using minimum dishes – WIN in my world.
Scrumptious Maple Pecan Cookies

225 grams Roasted Pecans
1 Cup All Purpose Flour
1/2 tsp Salt
1/2 tsp Baking Powder
100 grams Brown Sugar
1 Tbsp Maple Syrup
1 Egg
100 grams Unsalted Butter – Melted
Quartered Pecans and /or Chocolate Chips (Optional)
Directions
- In a food processor bowl place the pecans, flour, sugar, baking powder, salt and maple. Process until it becomes a very fine powder.
- Add in the egg and the butter an process until it forms a dough ball.
- Remove from bowl and wrap with plastic wrap. Place in the fridge for 30-60 minutes.
- Preheat oven to 350F (170C) and layer a baking pan with parchment paper.
- Remove from fridge and scoop 1 teaspoon at a time and roll into a small ball. Place on the pan and gently press on the ball to flatten a bit. Place cookies about 1/2 inch apart, they do not spread much.
- Repeat with the rest of the dough and place a quarter pecan or chocolate chip on each cookie (optional)
- Bake for 12 minutes or until browned at the edges and remove from ovn. Cool completely before eating.
